It's Artichock Season!

This last week, our locally owned grocery store had a special on artichokes.  Growing up in California, these babies were often consumed for dinner each spring and fall.  When I was younger, I would dip them in melted butter, but now I devourer them lighted coated in mayonnaise.  Now living in Washington, I snatch up these balls of greatness whenever they are available!
After work on Friday, I tore into the parking lot on a quest to grab me a few artichokes for dinner, but sadly they were sold out!   The Produce Manager must have felt my disappointment as he whispered to me that a new shipment would be in the store the next morning bright and early.  So....first thing Saturday (and even on my 29th birthday), I threw on my sweats and jetting out the door!  Success!!! I came home with a dozen of these GINORMOUS beauties.
 
I kept trying to show how big these artichokes small heads of cabbage  were in my pictures by placing fruit besides them.  It just didn't work. So I had Katie (along with Gunner's nose) hold one of these bad boys out to show their SIZE!   Wow!  I am enjoying every bite!

ohhhh my dear...I have NEVER seen one this large..ever...how do you eat them...amazing..

They look so big - can't believe Spokane gets artichokes that look this beautiful...
